Whether you're a seasoned baker or just starting out, we've got a collection of simple and delightful recipes to inspire you. So, roll up your sleeves and get ready to bake up a storm!
Chocolate Brownies

Ingredients
200g chopped dark chocolate
250g butter
1 ¾ cups brown sugar,
4 eggs
⅓ cup cocoa powder
1 ¼ cups plain flour
¼ teaspoon baking powder
Method
1. Preheat oven to 160°.
2. Place chocolate and butter in a saucepan over low heat and stir until smooth.
3. Allow to cool slightly.
4. Place the sugar, eggs, cocoa, flour and baking powder in a bowl.
5. Add the chocolate mixture and mix until combined.
6. Pour mixture into a 20cm lined square tin.
7. Bake for 50 minutes or until set. Cool in tin.
Lemon Slice
Ingredients
250g sweet plain biscuits
125g melted butter
¾ cup coconut
½ can condensed milk
1 lemon (zested)
TOPPING:
2 cups icing sugar
1 ½ tablespoons butter
½ cup lemon juice
Method
1. Crush biscuits and mix in coconut.
2. Add grated zest and mix.
3. Combine melted butter and condensed milk and add to dry mixture. Stir well.
4. Press into lined slice tin and refrigerate.
5. Mix all topping ingredients (lemon juice to taste) and cover cake when cooled.

Mars Bar Slice

Ingredients
195g of mars bars
90g butter
3 cups rice bubbles
200g milk chocolate
Method
1. Grease a slice tray.
2. Melt mars bars and butter in saucepan over a low heat while stirring, until smooth.
3. Press into slice tray.
4. Melt chocolate in microwave, stirring every 20-30 seconds.
5. Spread chocolate thinly over mixture in tin and refrigerate until set.
Vanilla Cupcakes
Ingredients
300g self-raising flour
165g caster sugar
180ml milk
125g butter melted and cooled
2 eggs
1 tsp vanilla
ICING:
225g icing mixture
30ml milk/cream
Food colouring (optional)
Method
1. Preheat oven to 200°. Sift flour and sugar into a large bowl.
2. In a small bowl, beat eggs. Add milk, vanilla and cooled butter. Stir to combine.
3. Add liquid mixture to dry mixture and mix to combine.
4. Spoon into cupcake papers and bake for 12-15 mins.
ICING:
1. Mix icing sugar, food colour and milk in a bowl until smooth.
2. Spread onto cooled cupcakes and decorate as you choose.

Choc Fudge

Ingredients
125g butter
1 egg
2 tsp cocoa
1 tsp vanilla
1 cup self raising flour
pinch salt
½ cup desicated coconut
Method
1. Melt butter, mix in sugar, egg and beat well
2. Add sifted cocoa, flour, vanilla, coconut, salt and mix well
3. Spread in well-greased pan
4. Bake 20-25 mins in moderate oven
Coconut Ice
Ingredients
5 ¼ cups icing sugar
2 ½ cups desiccated coconut
1 can sweetened condensed milk
1 egg white
Food colouring
Method
1. Grease and line 19cm square cake tin
2. Sift icing sugar into large bowl then stir in coconut, condensed milk and egg white
3. Divide mixture into two bowls, add food colouring to one mixture, press coloured mixture into pan, level and top with remaining mixture
4. Cover pan, refrigerate for three hours until set and cut into squares.

Jam Drops

Ingredients
120g butter
½ cup caster sugar
1 egg
1 ¾ cup self raising flour
½ cup jam
Method
1. Beat butter and sugar, add egg and beat well
2. Add vanilla, gradually add sifted flour to make stiff dough
3. Make into smooth balls and press thumb into centre then add jam
4. Bake in moderate oven until golden brown
Basic Biscuit Recipe (Egg Free)
Ingredients
¼ cup white sugar
125g butter
¼ tin sweetened condensed milk
1 ¼ cups self raising flour
Method
1. Preheat oven to 180°
2. Cream butter and sugar until light and fluffy
3. Add flour and pour in condensed milk. Mix to combine.
4. Roll into teaspoon-size balls and place on baking tray
5. Bake for 10-12 mins until golden.
Note: Choc chips, 100s and 1000s, smarties etc. can all be mixed into the dough with the flour, or used on top prior to baking. Plain biscuits (once cooled) can be dipped in melted chocolate and left to set.

Date Loaf

Ingredients
1 ½ cups plain flour
1 ½ teaspoons baking powder
⅔ cup caster sugar
1 cup roughly chopped pitted dates
125g butter
¼ cup milk
2 eggs
Method
1. Preheat oven to 160°.
2. Sift flour and baking powder into a bowl.
3. Add sugar and dates and mix to combine. Set aside.
4. Place butter and milk in small saucepan over low heat and cook until just melted.
5. Add to flour mixture with eggs and stir until combined.
6. Spoon into provided tins, filling ¾ high.
7. Bake for approximately 30-40 minutes until a skewer comes out clean.
8. Cool completely before packaging.
Banana Loaf
Ingredients
125g butter
1 cup caster sugar
¼ cup brown sugar
3 eggs
2 cups plain flour
2 teaspoons baking powder
1 teaspoon cinnamon
¾ cup sour cream
1 cup mashed banana
Method
1. Preheat oven to 180°. Place butter and both sugars in bowl of electric mixer and beat until light and creamy.
2. Gradually add eggs, beating well. Sift flour and baking powder into mixture.
3. Add cinnamon, sour cream and banana, and stir to combine.
4. Spoon into provided tins, filling ¾ high. Bake for 20-25 mins, or until a skewer comes out clean when tested.
5. Cool completely before packaging.

Apple Cake

Ingredients
3 medium apples
3 eggs
1 cup light brown sugar
1 cup + 2 tablespoons plain flour
Method
1. Preheat oven to 175°. Peel apples, remove cores and dice into small cubes.
2. Beat eggs and sugar with a stand mixer for 8 minutes. Mixture should be pale brown and very thick.
3. Fold in flour gently.
4. Fold in apples gently.
5. Spoon into tin (¾ full) and bake for 35-40 mins, until a skewer comes out clean.
6. Cool completely before packaging and sprinkle with icing sugar.
Kid Friendly Rum Balls
Ingredients
1 tin condensed milk
1 pk crushed biscuits (Arnott's Marie biscuits)
1/4 cup of cocoa powder
1 cup desiccated coconut (for mixture)
1 cup desiccated coconut (to roll balls in)
Method
1. Crush the buscuits using a bag and rolling pin, food processor or blender
2. Combine all of the ingredients together in a large bowl. Mix until fully combined.
3. Using your hands, roll the mixture into heaped teaspoon-sized balls and then toss through a bowl of coconut until well coated.
